cauliflower fritters with cilantro lime sauce

for guilt free snacking or a fun dinner side:)

Ingredients

- 3/4 pound or 1 small head of chopped cauliflower&&!- 1 small diced onion&&!-3 tbsp finely chopped parsley&&!-1 clove minced garlic&&!-4 large eggs or flaxseed eggs&&!-1.5 tsp ground cumin&&!-1 tsp cinnamon&&!-1/2 tsp turmeric&&!-1 1/2 tsp salt&&!-1 tsp black pepper&&!-generous half cup flour (I always use spelt four)&&!-3 cups breadcrumbs&&!- 1 single serving cup of plain coconut yogurt&&!-1 tbsp fresh cilantro&&!-juice from half a lime&&!-salt, pepper, and cayenne to taste

Instructions

- steam cauliflower in salted water for 15 minutes&&!- in a bowl combine onion, parsley, minced garlic, eggs, ground cumin, cinnamon, turmeric, salt, black pepper, flour&&!- drain cauliflower and add to bowl, using fork to mash it all together&&!- use hands to form fritter shapes on parchment paper lined pan, coat in breadcrumbs. You’ll wanna sprinkle them on and press in to help fritters hold&&!- bake for 15 minutes at 425F, then flip and bake for another 10 (I served these upside down because breadcrumb side is ugly 🙂)&&!-while fritters are baking, make sauce by blending: coconut yogurt, fresh cilantro, lime juice , salt, pepper, and cayenne. Chill for a few mins before serving
